Chocolate Cake Pops.

Everyone these days seems to be bringing up "Cake Pops”. Up until a few weeks ago I had not even heard about them, yes I have quite possibly been living in my own world. It is amazing the things people have done with them, so many exciting shapes and sizes. I thought I would start small there is a reason they say you have to walk before you can run. I was leafing through an old recipe magazine and I found this recipe. They make any party more festive instantly and with Christmas approaching it is a great idea to try these. So after trying to patiently twirl pieces of ribbon around my sticks I began actually trying out the recipe.

600g  Chocolate Mud Cake
3 cups white chocolate melts
1 cup Shredded Coconut
1 cup hundreds and thousands
1 cup flaked almonds
bamboo skewers and ribbon to decorate

  1. Line a large baking tray with non-stick baking paper.Roughly chop the mud cake and place in a large bowl.Use your hands to break it up until crumbled, then take tablespoonfuls of the mixture and roll firmly into balls. Put balls onto a tray.
  2. Place the white chocolate melts in a heatproof bowl over a saucepan of simmering water (make sure the base of the bowl doesn't touch the water)stir until the chocolate has melted.Remove bowl from the pan.
  3. Spread coconut, hundred and thousands, and almonds on separate plates. Working one at a time, use 2 forks to dips ball into the melted chocolate. Allow the excess chocolate to drip back into the bowl before rolling the ball in coconut.Place on prepared tray to set.Repeat coating a third of the balls in coconut, a third in hundred and thousands, and a third in almonds.
  4. Cut skewers in half (MAKE SURE YOU CUT OFF THE POINTY END )wrap with a ribbon and gently insert one halfway into each ball to act as a lollipop stick.

My final conclusion they are a little fiddly and I am not sure I have the right level of patience for them, as you can see mine turned out a little messy ...oh well I guess I will have to practice.
