Saint Patrick’s Day is almost upon us - so it’s time to break out the green food colouring for the Sweet Tooth Chronicles’ first St Patrick’s Day, recipe :)!I know I am a little early with this post but I just got excited with this recipe and it was a lot fun.

Ingredients:

1 Egg White
1/2 Tsp Water
1/2 Cup Sugar
1/2 Tsp Salt
1/4 Tsp Cinnamon

250g Nuts such as peanuts or cashews
Green Food Colouring
1/2 Tsp Bailey’s Irish Cream
1/2 Cup Icing Sugar

Preparation:

  • Preheat the oven to 150 degrees F. Beat egg white (with a fork), add a few drops of green colouring, Bailey’s and water in large bowl.
  • Combine sugar, salt, cinnamon in a re-seal able bag and few drops of food colouring (the Powder would be better) just use your finger tips together and rub the colouring into the sugar mixture.
  • Shake the bag.
  • In a separate tray mix a little more food colouring and rub it into the icing sugar like before till it turns a pale green
  • Place the nuts in the egg mixture & drain back into bowl with slotted spoon. Shake in bag. Spread out in foil-lined pan. Bake for 30 to 45 minutes.
  • Take them out of the oven and roll in the tray containing the green icing sugar coat and leave them to cool for about 10 min the icing sugar will harden slightly.
